This is a healthier version of chicken pot pie, I actually like the phylo crust in this better than the thicker crust of the traditional pie. Calories:298 Fat: 8.3 grams Carbs: 30 grams.

Ingredients For healthy chicken/phylo pie

  • 1 Tbsp
    olive oil, extra virgin
  • 1/2 c
    cauliflower florets
  • 2
    carrots, chopped
  • 2
    celery stalks, chopped
  • 1/2
    onion, chopped
  • 2
    boneless, skinless chicken breasts, cut into cubes
  • 2 Tbsp
    flour
  • 1/2 tsp
    chili powder
  • 1/4 tsp
    pepper
  • 1/4 tsp
    paprika
  • 1-1/2 c
    fat free milk
  • 1 c
    frozen peas
  • 2 Tbsp
    light mayonnaise
  • 1 tsp
    dijon mustard
  • 4 lg
    sheets, phylo dough, thawed if frozen

How To Make healthy chicken/phylo pie

    Heat oven to 350. Spray a lg casserole dish w/ cooking spray. Heat oil in lg pot or deep skillet over med-high heat. Add cauliflower, carrots, celery and onions, cook 10 mins.

    In plastic ziplock bag, add flour, chili powder, pepper and paprika. Add chicken to bag and shake to coat. Add chicken to skillet, cook 4 mins, stirring.

    Add milk, bring to a boil until thickened. Add peas, mayonnaise and mustard. Simmer 10 mins, stirring often. Spoon into casserole dish. Spray each phylo sheet w/ a little cooking spray. Layer the sheets over filling in casserole dish. Bake 10 mins, or until heated through and phylo dough is light brown.
