happy family chicken curry
One of my oldest son's favorite dishes, and enjoyed by my Indian friends as well. The house smells wonderful when this is cooking. Don't let the long list of ingredients discourage you. They're all easy to get and the dish is pretty easy and quick to make.

Ingredients For happy family chicken curry

2 tspvegetable oil

2large chicken boneless skinless breast portions, cut into 1 in pieces

1 mdonion, chopped

6 clovegarlic, chopped

3 mdpotatoes, peeled and cut into 1 inch pieces

1 mdred bell pepper, cut into 1 inch pieces

2apples, peeled, cored, chopped
-
2tomatoes, peeled and cut into 2 in pieces
-
1/4 cchopped fresh cilantro
-
1/2 tspground cumin
-
3 Tbspcurry powder
-
1/4 tspcayenne -adjust for taste
-
1/2 craisins
-
15 ozcan unsweetened coconut milk
-
2 Tbspsugar
-
1 1/2 cchicken broth or water
-
2 cplain yogurt
-
***salt and pepper to taste
How To Make happy family chicken curry

1Heat oil in a large heavy pot over medium heat. Add chicken, brown meat.

2To chicken pieces, add cumin, curry powder, cayenne. Stir in raisins.

3Add onion, garlic until onion is translucent, about 5 minutes.

4Add potatoes peppers, apples, tomatoes, ¼ cup chopped cilantro and stir fry but do not cook thru. About 2-3 mins.

5Add sugar, coconut milk and 1 1/2 cups water or chicken stock and bring to a boil. Reduce heat to a simmer and cook, stirring occasionally, until chicken is cooked through and potatoes are tender, about 15 minutes.

6Stir in yogurt and heat through. Add salt and pepper to taste. Serve over rice. Jasmine or basmati rice is also good with this, but any rice will do. I also serve with Naan Indian bread. It's like a fluffier pita.
