Ingredients For fricase de pollo...chicken fricase

  • 3-4 lb
    chicken pieces
  • 1 sm
    onion, diced
  • 1 sm
    green pepper, diced
  • 4
    garlic cloves, diced
  • 2 can
    tomato sauce
  • 1 c
    white cooking wine
  • 1 c
    water
  • 1/4 c
    green olives
  • 1/2 c
    red pimentos
  • 2
    bay leaves
  • 1/4 c
    olive oil
  • 2 md
    potatoes large dice
  • salt/pepper to taste

How To Make fricase de pollo...chicken fricase

    In a large pot on medium high....pour olive oil and brown chicken in batches about 2-3 minutes per side.

    remove and set aside....add the onions, peppers & garlic...cook a few minutes....add the wine to deglaze....add chicken back in, as well as the rest of the ingredients....stir and simmer until chicken and potatoes are cooked through and fork tender.....enjoy with white rice...
