1 lbchicken, cut into bite size pieces

1 lbground turkey

1 lbpork sausage, spicy hot, bulk

1 lbpork belly, slab, cut into bite size pieces

1 lbsmoked bacon, cut into bite size pieces

4 clovegarlic, finely chopped

1 lgyellow onion, chopped
-
1 smanaheim, seeded and chopped
-
1 smpoblano peppers, seeded and chopped
-
1 smserrano pepper, seeded and chopped
-
1 smchipotle peppers, seeded and chopped
-
1 smancho peppers, seeded and chopped
-
4 stalkcelery, chopped
-
1 cgreen peppers, seeded and chopped
-
1 cred peppers, seeded and chopped
-
1 bunchcilantro, chopped
-
1 bunchgreen onions chopped
-
1 canblack olives, drained and chopped
-
1 canlarge kidney beans, with liquid
-
1 canlarge black beans, with liquid

2 jarlarge fire roasted red tomatoes, diced

1 canlarge tomato paste, gives richness

1 1/2 cfresh lime juice

the zest from all the limes

1/4 cred pepper flakes, crushed

2 cwhite beans, cooked

3 cchili powder
-
1 Tbspcumin

1/4 cfennel seeds, roasted first and crushed

4 Tbsppaprika

*** chicken stock as needed, see directions. ***

2 Tbspsavory, crushed

2 Tbsprosemary, dried and crushed

How To Make fireman bob's wonderful wacky smacky chili revised

1In a Large skillet, first brown the pork belly, smoked bacon and pork sausage. Remove from skillet and set aside. In the pork fat/bacon drippings, brown the chicken and turkey. Drain and set aside.

2Chop all Peppers, onions, green onions, celery, cilantro, black olives, and set aside. In the LARGEST Stock Pot or Dutch Oven, combine kidney beans, black beans, fire roasted tomatoes, tomato paste, lime juice, lime zest, red pepper flakes, white beans, chili powder, cumin, rosemary, savory, basil and paprika. Simmer for 10 minutes on medium heat stirring constantly.

3Add the Pork Belly, Pork Sausage, Smoked Bacon, and Chicken. Turn the heat down to low and simmer for 8 hours, watching the " liquids ". *** Add Chicken Stock as needed *** ENJOY !!!!
