A full of flavor, low fat salad, great for lunch or dinner! I sometimes add a 1/2 a can of drained black beans to add some nutritional benefit, plus extra taste.

Ingredients For fast fajita salad

1 Tbspcanola oil

2 lgonions, cut into wedges

2 lggreen bell peppers, or use 1 green pepper and 1 red pepper, cut into strips

1 lbboneless, skinless chicken breasts, cut into strips

2 Tbspdry fajita seasoning mix

4 cshredded lettuce

1/2 csalsa

1/2 clight sour cream
How To Make fast fajita salad

1In lg skillet, heat oil over med-high heat. Add onions and peppers. Saute 5 mins, stirring often.

2In bowl, combine chicken and fajita seasoning, toss to coat. Add chicken to skillet, cokk 5 mins, stirring often.

3Place lettuce on serving platter, top w/ chicken mix. Drizzle w/ salsa. Serve w/ sour cream.
