A full of flavor, low fat salad, great for lunch or dinner! I sometimes add a 1/2 a can of drained black beans to add some nutritional benefit, plus extra taste.

Ingredients For fast fajita salad

  • 1 Tbsp
    canola oil
  • 2 lg
    onions, cut into wedges
  • 2 lg
    green bell peppers, or use 1 green pepper and 1 red pepper, cut into strips
  • 1 lb
    boneless, skinless chicken breasts, cut into strips
  • 2 Tbsp
    dry fajita seasoning mix
  • 4 c
    shredded lettuce
  • 1/2 c
    salsa
  • 1/2 c
    light sour cream

How To Make fast fajita salad

  • 1
    In lg skillet, heat oil over med-high heat. Add onions and peppers. Saute 5 mins, stirring often.

    In bowl, combine chicken and fajita seasoning, toss to coat. Add chicken to skillet, cokk 5 mins, stirring often.

    Place lettuce on serving platter, top w/ chicken mix. Drizzle w/ salsa. Serve w/ sour cream.
