I can't believe I haven't posted this recipe before now. It's one of the easiest and most trusted fall-back recipes I have. I think it also qualifies as a great comfort food. 06-11-14

Ingredients For ellen's easy chicken and rice

  • 2
    chicken breasts, boneless and skinless
  • 2 Tbsp
    cooking oil
  • 1 can
    (10.75 oz.) cream of chicken soup
  • 1 pkg
    boil-in-bag white or brown rice
  • 2 can
    (soup cans) milk
  • salt and pepper to taste

How To Make ellen's easy chicken and rice

  • 1
    Place cooking oil in a large skillet. Add chicken breasts and brown on both sides. Season with salt and pepper as desired. Drain.

    In a medium-sized bowl, combine the soup and milk. Stir to blend. Pour over chicken and add rice. Bring to a boil and reduce heat. Cook, covered, for 30 minutes or until chicken is tender.

    The soup and milk will form a nice gravy to spoon over the chicken and rice. Enjoy!
