I can't believe I haven't posted this recipe before now. It's one of the easiest and most trusted fall-back recipes I have. I think it also qualifies as a great comfort food. 06-11-14

Ingredients For ellen's easy chicken and rice

2chicken breasts, boneless and skinless

2 Tbspcooking oil

1 can(10.75 oz.) cream of chicken soup

1 pkgboil-in-bag white or brown rice

2 can(soup cans) milk

salt and pepper to taste
How To Make ellen's easy chicken and rice

1Place cooking oil in a large skillet. Add chicken breasts and brown on both sides. Season with salt and pepper as desired. Drain.

2In a medium-sized bowl, combine the soup and milk. Stir to blend. Pour over chicken and add rice. Bring to a boil and reduce heat. Cook, covered, for 30 minutes or until chicken is tender.

3The soup and milk will form a nice gravy to spoon over the chicken and rice. Enjoy!
