Ingredients For easy arroz con pollo

6boneless, skinless chicken breasts

1 csalsa

8 oztomato sauce

14 1/2 canchicken broth

1/2 cchopped green pepper

1/2 cchopped onion

salt and garlic powder and pepper to taste

1 3/4 cinstant rice
-
1/2 cshredded monterrey jack cheese

1/2 cshredded cheddar cheese
How To Make easy arroz con pollo

1Spread rice in a greased 13x9x2 inch casserole pan. Sprinkle both sides of each chicken breasts with salt, pepper and garlic powder and lay on top of rice.

2In a large bowl, mix broth, salsa, tomato sauce, onion, and green pepper. Pour over chicken.

3Cover and bake for 55 minutes at 350 or until rice is done and liquid is absorbed. Uncover and sprinkle with cheeses and bake uncovered for about 10 minutes or until cheese is melted.
