curried chicken salad
One of my favorite restaurants, La Grande Orange Grocery, has a chicken curry salad that they sell that is one of the best I have ever had. It is crazy addicting. A few times now, I have tried to duplicate it, failing the first couple tries. Alas, I have perfected the recipe. It’s not exact, but it’s absolutely delicious, loved by many, and very close the original. This is tasty on its own, scooped over a bed of greens, or between two pieces of bread.

Ingredients For curried chicken salad

3 cdiced grilled chicken breast

1/4 cgolden raisins

1/4 calmonds, slivered
-
1/4 cdiced celery
-
1 Tbspdiced shallots
-
1/2gala apple, diced
-
1 cmayonnaise
-
1/4 choney
-
1 1/2 Tbspcurry powder
-
dashsalt and pepper
How To Make curried chicken salad

1Season chicken breast as you like, grill, let cool, dice, and add to medium mixing bowl.

2Add raisins, almonds, celery and apple.

3In a separate bowl, mix together the mayo, honey, salt and pepper.

4Add mayo mix to the chicken bowl and toss to coat evenly and blend well.

5Serve over a bed of lettuce, by itself, or as a sandwich. Enjoy!
