curried chicken salad

One of my favorite restaurants, La Grande Orange Grocery, has a chicken curry salad that they sell that is one of the best I have ever had.  It is crazy addicting. A few times now, I have tried to duplicate it, failing the first couple tries. Alas, I have perfected the recipe. It’s not exact, but it’s absolutely delicious, loved by many, and very close the original. This is tasty on its own, scooped over a bed of greens, or between two pieces of bread.

Ingredients For curried chicken salad

  • 3 c
    diced grilled chicken breast
  • 1/4 c
    golden raisins
  • 1/4 c
    almonds, slivered
  • 1/4 c
    diced celery
  • 1 Tbsp
    diced shallots
  • 1/2
    gala apple, diced
  • 1 c
    mayonnaise
  • 1/4 c
    honey
  • 1 1/2 Tbsp
    curry powder
  • dash
    salt and pepper

How To Make curried chicken salad

    Season chicken breast as you like, grill, let cool, dice, and add to medium mixing bowl.

    Add raisins, almonds, celery and apple.

    In a separate bowl, mix together the mayo, honey, salt and pepper.
  • 4
    Add mayo mix to the chicken bowl and toss to coat evenly and blend well.

    Serve over a bed of lettuce, by itself, or as a sandwich. Enjoy!
