This is a fast and delicious recipe for the mom who doesn't have much kitchen duty time. It took me 15-20 minutes to prep and 4 hours of cooking time. This can be made on the 4-hour or 6- or 8-hour settings, depending on your time. Just make sure to do the halfway mark things according to your cooking time total. Enjoy!

This mandarin chicken is a simple and delicious slow cooker dinner. Mandarin oranges cook in the sauce and provide a sweet, citrus flavor. It's a nice contrast to the soy sauce and teriyaki sauce that's also in the sauce. The chicken tenderloins are extremely tender and fall apart. With carrots and broccoli in the recipe, serve with steamed rice for a complete meal.

  • 1 lg
    yellow onion, chopped into medium pieces
  • 1 1/2 c
    fresh carrots, I had baby carrots and cut into quarters
  • 1 can
    mandarin oranges in juice, do not drain (15 oz)
  • 8 - 10
    frozen chicken tenderloins
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper
  • 1/4 c
    lemon juice
  • 2 Tbsp
    soy sauce, low sodium
  • 2 Tbsp
    teriyaki sauce
  • 2 Tbsp
    corn starch
  • 1 or 2
    broccoli crowns, cleaned and cut to florets
  • steamed rice for serving

  • In a Crock Pot, add onion, carrots, and mandarin oranges with juice. Add the chicken.
