This has it all, creaminess from the soup, cheese and yogurt and crunchiness from the cornflakes and almonds, a smorgasbord of flavors. If you want to cut calories, like I do, use reduced fat cheese and soup. Calories: 251 Fat: 9 grams Carbs: 13 grams

Ingredients For creamy, crunchy chicken casserole

  • 3 c
    cooked, cubed chicken breast
  • 1 c
    sliced celery
  • 1 c
    red bell pepper, chopped
  • 3/4 c
    shredded cheddar cheese
  • 1 can
    cream of chicken soup
  • 6 oz
    plain, low-fat yogurt
  • 1/4 c
    sliced scallions
  • 1 Tbsp
    lemon juice
  • 1/4 tsp
    pepper
  • 1/2 c
    crushed cornflakes
  • 1/4 c
    sliced almonds

How To Make creamy, crunchy chicken casserole

    Heat oven to 400. Lightly spray a lg casserole dish w/ cooking spray. In lg bowl, stir together chicken, celery, red bell pepper, cheese, soup, yogurt, scallions, lemon juice and pepper.

    Spoon into casserole dish. In another bowl, stir together cornflakes and almonds. Sprinkle over casserole. Bake, uncovered 30 mins.
