With some left over chicken, you can make this easy summer casserole in no time, then refrigerate overnight to let the flavors blend. Next day you're all set to bake it.

Ingredients For creamy, cheesy chicken bake

    cooked, cubed chicken
  • 1
    9 oz pkg frozen mixed veggies
  • 2 c
    elbow macaroni
  • 1 c
    reduced fat, shredded cheddar cheese
  • 1
    can reduced fat cream of mushroom soup
  • 2 c
    water
  • 1 c
    milk
  • 1/2 tsp
    curry powder
  • 1 c
    cornflake crumbs
  • 4 Tbsp
    melted butter

How To Make creamy, cheesy chicken bake

    In lg bowl, combine all ingredients, except cornflake crumbs and butter. Mix well. Spoon into a 8" square casserole dish.

    Cover w/ foil. Refrigerate overnight. Heat to 350. In bowl, combine cornflakes crumbs and butter. Stir chicken mix. Sprinkle crumbs over mix. Bake 45 mins, or until bubbly and golden.
