Ingredients For coconut tomato chicken over sazon goya rice

2 lgchicken breast skinned and cut into bite size pieces

1/4 cbaking soda

2bay leaves

1 tspturmeric, ground

1/2 tspcumin

1/2 tspsalt

1/2 tspchili powder

1/4 tspblack pepper

1 mdonion chopped

3 clovegarlic chopped

3roma tomatoes chopped

1 Tbspginger paste

1/4 colive oil
-
1 cancoconut milk
-
2 cchicken stock
-
2 cjasmine rice

1 Tbspsazon goya seasoning
How To Make coconut tomato chicken over sazon goya rice

1Sprinkle baking soda over chicken and lightly rub and let sit 30 minutes. Rinse well. Now chicken is ready to use.

2Add olive oil to saute pan and saute onions until translucent. Add onions to food processor and add tomatoes, turmeric, cumin, salt, chili powder, pepper, garlic, coconut milk and ginger paste. Process until smooth.

3Add chicken to saute pan and pour coconut milk mixture over top. Add bay leaves. Cook on med for 30 minutes or until chicken is done.

4Meanwhile add chicken stock to pan with sazon goya seasoning. Bring to a boil. Add rice and cook over med heat for 20 minutes or until rice is cooked and most of liquid is absorbed.

5Serve chicken over rice.
