Unique taste sweet and savory. You don't have to do the baking soda step but it tenderizes the chicken and gives it a silky mouth feel.

Ingredients For coconut tomato chicken over sazon goya rice

  • 2 lg
    chicken breast skinned and cut into bite size pieces
  • 1/4 c
    baking soda
  • 2
    bay leaves
  • 1 tsp
    turmeric, ground
  • 1/2 tsp
    cumin
  • 1/2 tsp
    salt
  • 1/2 tsp
    chili powder
  • 1/4 tsp
    black pepper
  • 1 md
    onion chopped
  • 3 clove
    garlic chopped
  • 3
    roma tomatoes chopped
  • 1 Tbsp
    ginger paste
  • 1/4 c
    olive oil
  • 1 can
    coconut milk
  • 2 c
    chicken stock
  • 2 c
    jasmine rice
  • 1 Tbsp
    sazon goya seasoning

How To Make coconut tomato chicken over sazon goya rice

    Sprinkle baking soda over chicken and lightly rub and let sit 30 minutes. Rinse well. Now chicken is ready to use.

    Add olive oil to saute pan and saute onions until translucent. Add onions to food processor and add tomatoes, turmeric, cumin, salt, chili powder, pepper, garlic, coconut milk and ginger paste. Process until smooth.

    Add chicken to saute pan and pour coconut milk mixture over top. Add bay leaves. Cook on med for 30 minutes or until chicken is done.

    Meanwhile add chicken stock to pan with sazon goya seasoning. Bring to a boil. Add rice and cook over med heat for 20 minutes or until rice is cooked and most of liquid is absorbed.

    Serve chicken over rice.
