I had some leftover cooked rice and some leftover cooked chicken. Searching the cupboard I found a box of Spanish Rice-a-Roni that needed to be used....thus this recipe

Ingredients For chicken tomato rice

  • 1 box
    rice-a-roni spanish rice
  • 2 Tbsp
    butter
  • 2 c
    water
  • 16 oz
    tomato sauce
  • 1 Tbsp
    minced dried onion
  • 1 1/2 tsp
    sugar
  • 1 tsp
    hot sauce (or to taste)
  • 1 c
    cooked rice
  • 2 c
    cooked chicken, cut into bite size pieces

How To Make chicken tomato rice

    Brown Rice-a-Roni in large skillet in butter as directed on the box.

    Add seasoning packet, water, dried onion, sugar, tomato sauce, hot sauce, rice, chicken. Mix thoroughly and place lid on skillet. Let it simmer for 15 minutes until piping hot and serve with a salad or vegetables for a great meal.
