2 lgzucchini, ends trimmed

3 Tbspolive oil

2italian-style chicken sausages

2 tspcrushed red pepper flakes

salt and pepper

1/2sweet onion, chopped

3 tspminced garlic

114 oz can whole peeled tomatoes, divided, chopped

1/2 citalian style bread crumbs

1/4 cgrated parmesan cheese

1 Tbspchopped basil
How To Make chicken sausage stuffed zucchini

1Heat oven to 375. Cut zucchini lenghtwise in 1/2. Using a spoon, scoop out the flesh. Heat oil in lg skillet over medium heat.

2Cook sausages, breaking up the meat as you cook, until browned. Sprinkle w/ red pepper flakes, season w/ salt and pepper. Stir in onion and galric, cook 5 mins, stirring often.

3Spoon sausage mix into a bowl. Stir in tomatoes, bread crumbs,, parmesan cheese and basil. Stuff zucchini shells w/ stuffing. Place on a baking sheet and bake 30 mins.
