This is a quick and easy recipe I found this morning which is both appetizing and packed full of protein. You can also add other toppings, such as salsa, diced avocado, and cilantro if you prefer. Even corn chips would be awesome as a topping. Recipe & photo: bushbeans.com 01-15-15

Ingredients For chicken, rice & beans

3 cwhite or brown rice, cooked

1 canblack beans, drained and rinsed

1-1/2 crotisserie chicken, cut into 3/4-inch pieces

1 cfrozen corn, thawed

1 canvegetarian baked beans
-
1/2 cshredded cheddar cheese or colby-jack
-
sour cream, if desired
How To Make chicken, rice & beans

1Place the cooked rice, beans, chicken and corn into a large saucepan. Stir to combine.

2Heat over medium heat until well heated through, about 5-7 minutes. Stir frequently.

3Top with cheese, and serve with optional sour cream.
