This is a quick and easy recipe I found this morning which is both appetizing and packed full of protein. You can also add other toppings, such as salsa, diced avocado, and cilantro if you prefer. Even corn chips would be awesome as a topping. Recipe & photo: bushbeans.com 01-15-15

Ingredients For chicken, rice & beans

  • 3 c
    white or brown rice, cooked
  • 1 can
    black beans, drained and rinsed
  • 1-1/2 c
    rotisserie chicken, cut into 3/4-inch pieces
  • 1 c
    frozen corn, thawed
  • 1 can
    vegetarian baked beans
  • 1/2 c
    shredded cheddar cheese or colby-jack
  • sour cream, if desired

How To Make chicken, rice & beans

  • 1
    Place the cooked rice, beans, chicken and corn into a large saucepan. Stir to combine.

    Heat over medium heat until well heated through, about 5-7 minutes. Stir frequently.
  • 3
    Top with cheese, and serve with optional sour cream.
