Guess we all have our own way to make Chicken Parm ~ and I don't always make it the same. Today was Father's Day and my husband asked me to make him some. This is how I made it today.

Ingredients For chicken parm

  • 4-5 md
    breast of chicken, cut in half (or whole chicken cut in 8 pieces)
  • 2 lg
    peppers, red and green
  • 1 lg
    onion
  • 2 lg
    eggs
  • 1/2 c
    of milk
  • 1 can
    of italian bread crumbs
  • 1 bag
    of mixed italian cheeses grated
  • 1 can
    large can of tomatoes
  • 1 can
    tomato paste
  • 1 pkg
    pasta of choice
  • 1 lg
    potato
  • handful of italian spices, i sprinkle some sugar in sauce as well

How To Make chicken parm

    Wash chicken and pat dry. Heat oil in heavy cast iron pan, saute peppers and onions, then as they are simmering, cut up one potato into small chunks.

    Remove the onions and peppers and brown the potatoes. Now mix your eggs with milk in one dish, the bread crumbs in another dish. Dip chicken pieces in egg and then coat with the bread crumbs. brown on both sides at a medium heat.

    While they are browning mix your can of tomatoes and tomato paste with spices. Put on stove to simmer and add your peppers and potatoes ~ I also put some frozen baby peas in ~

    Now when your chicken is cooked put some cheese on each one cover pan to melt the cheese.

    Boil your pasta to taste. Now you can pour your sauce over the pasta and chicken. I serve with a salad and Italian Bread.
