I love to cook and we all like family get-togethers for late lunch or dinner at MawMaw's to catch up and enjoy a day in the country! The kids and grandkids love to fish in our pond or sit on the porch just visiting! This is a quick dish and a family favorite! Additions of veggies are optional according to likes and dislikes while MawMaw gets out of the kitchen with plenty of time for her family! The quantity can be adjusted to the size of the crowd. I usually serve this with garlic bread and a Greek or tossed salad.

Ingredients For chicken olive noodles

  • 2 c
    chicken, cooked & diced
  • 1 can
    cream of mushroom soup
  • 1 can
    cream of chicken soup
  • 2 can
    water
  • 1
    onion, diced
  • 1/4 c
    bell pepper, chopped
  • 1 can
    black olives, sliced (small)
  • 1 jar
    mushrooms (or fresh)
  • 1 jar
    pimentos, diced
  • 1 stalk
    celery, diced
  • 1 pkg
    pasta (noodles, rotini,etc.)
  • 1 1/2 lb
    velvetta cheese, cubed

How To Make chicken olive noodles

    Mix chicken, soups, and water and bring to a boil.
  • 2
    Add vegetables and let simmer for 20 minutes while preparing pasta as directed.

    Add drained pasta to chicken mixture and let simmer few more minutes.

    Add cubed Velveeta Cheese, stirring constantly to prevent sticking until cheese is completely melted.
