Love, love this chicken dish, it's an old standby recipe I keep on hand for an elegant looking chicken dish. I usually just serve it with a simple salad. The fresh basil really makes it taste wonderful.

Ingredients For chicken in basil-tomato cream sauce

  • 1 Tbsp
    butter, melted
  • 1/2 c
    chopped onion
  • 1
    16 oz can whole tomatoes, chopped
  • 1/2 c
    light cream
  • 1/2 c
    fresh basil, chopped
  • 1/2 tsp
    each, salt and pepper
  • 6
    boneless, skinless chicken breasts

How To Make chicken in basil-tomato cream sauce

  • 1
    Melt butter in lg skillet over medium heat. Add onion, cook for 5 mins. Increase heat to high. Add tomatoes. Cook until liquid is absorbed.

    Add cream. Cook until slightly thickened. Remove skillet from heat. Add basil, salt and pepper, stir to combine. Place chicken in caaerole dish.

    Pour sauce over chicken and bake at 450 for 15 -20 mins, or until chicken is no longer pink inside.
