Okay, this recipe is not chicken & dumplings, these are chicken dumplings, and they are served with an awesome broth. I love this cold weather because it gets me into my mad (cooking) scientist mode. So, you ready… Let’s get into the kitchen.

Ingredients For chicken dumplings simmered in broth

  • THE DUMPLINGS
  • 12 oz
    chicken breast, chopped
  • 1 md
    egg, just the white
  • 1/2 c
    parmesan cheese, grated
  • 1/4 tsp
    black pepper, freshly grated
  • 1/4 tsp
    salt, kosher variety
  • 3
    strips of bacon, crispy and chopped
  • 2 Tbsp
    basil, chopped
  • 1 Tbsp
    fresh ginger, grated
  • THE BROTH
  • 3 c
    chicken broth, freshly made, if possible
  • 1/8 c
    dry sherry
  • 1 Tbsp
    tamari

How To Make chicken dumplings simmered in broth

    MAKING THE CHICKEN DUMPLINGS

    Add all the ingredients for the dumplings into a food processor, fitted with an S-blade.

    Use one-second pulses until the ingredients are minced together, but don’t over process, about 6 to 8 pulses.

    Roll two tablespoons of the mixture together into a ball, place on a parchment-lined tray, and repeat for the remaining mixture. You should have eight chicken dumplings

    MAKING THE BROTH

    Add the broth ingredients to a large pot, and bring to a slow boil.

    Place half the dumplings into the pot.

    Gently stir to keep them from sticking together.

    Cook covered, for 5 to 8 minutes, or until the dumplings are tender.

    Remove from the pot, and keep warm, while cooking the remaining dumplings.

    Get 2 bowls, and then place half of the dumplings in each bowl, and the ladle over the broth. Serve immediately.
