chicken chowder
I make this dish at least once a month. More so when it is a cold raining day. It is a family favorite. This is part 2 of my Chowder Recipes. This could also be made in the crock pot. Just add in all the vegetable & broth & set on high. Then about 2 hrs into cooking make the chicken, bacon & onion mix on the stove. Then add to the crock pot and let go for another 3-4 hrs.

Ingredients For chicken chowder

1 lbchicken, chopped

4-6 mdpotatoes, chopped

1 smonions, small white & chopped
-
2 smcarrots, chopped
-
3 smcelery, chopped

1 bagcorn kernels, frozen

1 lbbacon, chopped & cooked
-
2 boxchicken broth
-
1 cancream of chicken soup
-
1bay leaf
-
1/2 Tbspsalt and pepper
How To Make chicken chowder

1Get out a large pot & medium frying pan. Clean & chop all the vegetables. Place onions on the side. Chop the chicken & bacon.

2Place frying pan over medium heat. Add in the chicken, bacon and onions & bay leaf. Lightly salt & pepper. Cook until bacon is crispy, onions are tender & chicken is almost done.

3Place to potatoes with the broth in the pot over medium to high heat. Bring to a boil. When almost fork tender add in the carrots & celery. Then add in the chicken bacon onion mix. Turn down heat. You might need to add in water if need be.

4Simmer over medium heat for another 15 minutes. Then add in the corn & the chicken Taste for seasoning. Add more salt & pepper if need be. Mix in the cream of chicken. Let cook for another 10-15 minutes. Chowder should be creamy & thick but not to thick.
