chicken/bacon/cheese batard with avocado sauce

I think I’m having too much fun in the kitchen. This is a excellent sandwich made with a sautéed chicken breast, some bacon & cheese, on a toasted batard, and a dreamy avocado sauce. So, you ready… Let’s get into the kitchen.

Ingredients For chicken/bacon/cheese batard with avocado sauce

  • THE SANDWICH
  • 1
    batard, 10 inches in length
  • 2 Tbsp
    olive oil, extra virgin
  • 1 Tbsp
    sweet butter, unsalted
  • 1 md
    boneless chicken breast, about 8 ounces
  • 4
    strips of bacon, cooked through
  • black pepper, freshly ground, to taste
  • kosher salt, to taste
  • 3 oz
    white aged cheddar cheese
  • romaine lettuce, for garnish
  • 1 lg
    tomato, sliced, for garnish
  • THE DRESSING
  • 1/2 md
    ripe avocado
  • 1 Tbsp
    mayonnaise
  • 1 Tbsp
    lemon juice, freshly squeezed
  • 1 tsp
    worcestershire sauce
  • kosher salt, to taste

How To Make chicken/bacon/cheese batard with avocado sauce

    Whisk or use a food processor fitted with an S-Blade to mix all the dressing ingredients together until smooth, and then reserve.

    Cut the batard in half, and the split lengthwise to make two sandwiches.

    Cut the chicken breast in half, lengthwise.

    Add the oil and butter to a sauté pan, and bring up to medium heat.

    Salt and pepper the chicken breasts, to taste, and add to the pan.

    Sauté 2 to 3 minutes per side, or until cooked through, and slightly browned.

    Remove from the pan, but reserve the oil and butter from the pan.

    Place a rack in the upper position, and set your oven to broil
  • 9
    Use a pastry brush to brush the butter/oil from the pan onto the cut sides of the four pieces of the batard.

    Place into the oven on a baking sheet, oil/butter side up, and broil until they begin to brown.

    Remove from oven, but leave the broiler on.

    Place a chicken breast on each of the bottom portions of the cut batard.

    Lay two strips of bacon over each of the chicken breasts.

    Add the cheddar cheese over the bacon.

    Return to the broiler until the cheese is bubbly, and begins to brown.

    While broiling, spread some of the dressing over the top portions of the batards.

    Remove the bottoms portions from the oven, garnish with lettuce and tomatoes, salt, and pepper, and serve while still warm.
