Chicken and rice go together like . . . bacon and eggs? pork chops and applesauce? salt and pepper? Well, anyway, they go together in my kitchen any day of the week! I love the Parmesan cheese in this dish rather than the usual cheddar. Recipe: recipe.com 02-17-15

Ingredients For chicken and wild rice bake

  • 1 pkg
    (6 oz.) long grain and wild rice mix
  • 1 md
    onion, chopped (1/2 cup)
  • 1 stalk
    celery, chopped (1/2 cup)
  • 2 Tbsp
    butter
  • 1 can
    (10 oz.) condensed chicken with white and wild rice soup - or - cream of chicken soup
  • 1/2 c
    sour cream
  • 1/3 c
    dry white wine - or - chicken broth
  • 2 Tbsp
    snipped fresh basil - or - 1/2 tsp. dried basil, crushed
  • 2 c
    shredded cooked chicken
  • 1/3 c
    finely shredded parmesan cheese

How To Make chicken and wild rice bake

    Prepare rice mix according to package directions.

    Meanwhile, in a large skillet, cook onion and celery in hot butter over medium heat until tender.

    Stir in soup, sour cream, wine and basil. Stir in cooked rice and chicken.

    Transfer mixture to an ungreased 2-qt. baking dish. Sprinkle with cheese.

    Bake, uncovered, in a preheated 350º oven for 35 minutes or until heated through.
