Ingredients For chicken a'la france

3chicken breast halves, skinned and boned

2 Tbspolive oil, extra virgin

2 1/2 cfresh mushrooms, sliced

1/3 cminced shallots
-
2 Tbspchopped fresh parsley
-
1/2 tspdried, whole tarragon
-
1/2 cwhite wine
-
2 Tbspdijon mustard
-
2 tspcorn starch
-
1/2 tspsalt
-
fresh ground pepper to taste
How To Make chicken a'la france

1Place each piece of chicken between plastic wrap and pount to 1/4-inch thickness. Cut each piece in half to make two pieces. Sprinkle chicken with salt and pepper.

2Heat oil in a large skillet. Cook chicken until barely done. Set on a plate and keep warm.

3Saute mushrooms and shallots and combine mustard, wine, herbs, pepper and cornstarch. Wisk until smooth.

4Return chicken to the pan with shallots and mushrooms. Pour sauce over chicken. Simmer uncovered for 5 minutes.
