Ingredients For chicken a'la france

  • 3
    chicken breast halves, skinned and boned
  • 2 Tbsp
    olive oil, extra virgin
  • 2 1/2 c
    fresh mushrooms, sliced
  • 1/3 c
    minced shallots
  • 2 Tbsp
    chopped fresh parsley
  • 1/2 tsp
    dried, whole tarragon
  • 1/2 c
    white wine
  • 2 Tbsp
    dijon mustard
  • 2 tsp
    corn starch
  • 1/2 tsp
    salt
  • fresh ground pepper to taste

How To Make chicken a'la france

    Place each piece of chicken between plastic wrap and pount to 1/4-inch thickness. Cut each piece in half to make two pieces. Sprinkle chicken with salt and pepper.

    Heat oil in a large skillet. Cook chicken until barely done. Set on a plate and keep warm.

    Saute mushrooms and shallots and combine mustard, wine, herbs, pepper and cornstarch. Wisk until smooth.

    Return chicken to the pan with shallots and mushrooms. Pour sauce over chicken. Simmer uncovered for 5 minutes.
