My family loves this tender, juicy chicken. The brine gives it such a great flavor and leaves it fork tender. Add the delicious sauce and you have a great piece of chicken... Enjoy!

Ingredients For brined & grilled chicken w/ creamy garlic sauce

  • BRINE
  • 3 Tbsp
    kosher salt
  • 2 Tbsp
    each - brown sugar & granulated sugar
  • 1 c
    boiling water
  • 3 1/2 c
    cold water
  • 3 lb
    boneless, skinless chicken breasts
  • GARLIC SAUCE
  • 2 Tbsp
    oil
  • 1 Tbsp
    butter
  • 4 - 5 clove
    minced garlic
  • 1 Tbsp
    flour
  • 1 c
    heavy cream
  • 1/2 c
    chicken broth
  • 2 oz
    softened cream cheese
  • 1/2 c
    grated parmesan cheese
  • salt & black pepper to taste

How To Make brined & grilled chicken w/ creamy garlic sauce

    In a saucepan, boil one cup of water. Stir in the salt and sugar until dissolved.

    Pour salt & sugar mixture with the 3 1/2 cup cold water and stir.Place chicken breasts into the water and refrigerate for 1 1/2 - 2 hours.

    Preheat grill - or could broil in oven. Remove chicken from brine. Pat dry with paper towels. I then spray both sides with non stick cooking spray or I've used olive oil. Salt, pepper and sprinkle with some garlic powder. Place on hot grill and cook on one side for about 4 - 5 minutes, turn over and continue cooking until juices run clear.

    Make sauce while chicken is grilling. Or can make it ahead and just warm up. In a medium saucepan, melt butter with oil. Add the garlic and saute for a minute or two. Add the flour and cook for about 1 more minute.

    Pour in the broth and heavy cream and bring to a slow boil and whisk until thickened. Whisk in the cream cheese and Parmesan until smooth and creamy.

    Spoon desired amount of sauce over your chicken and enjoy its yumminess!
