baked orange chicken
I used to make this when my kids were younger. I wanted something healthier than fried chicken. We all loved it. I started doing it with chicken legs only (pic is a half batch, I live alone). The leftovers are great for cold lunches or picnics. The original recipe called for a whole chicken, cut up. That's an "older" recipe. Now I feel old. Anywho,I think modifying with legs and extending the cooking time, makes it unique.

Ingredients For baked orange chicken

2-3 lbchicken legs

2eggs, slightly beaten

1/2 corange juice, fresh

1 1/2 ccracker meal

1 Tbsppaprika

1 Tbspshredded orange peal

6 Tbspbutter
How To Make baked orange chicken

1Rinse chicken, pat dry. Melt butter in 9x13 baking dish in 400 degree oven. Remove pan from oven.

2Dip chicken legs into mixture of egg and orange juice, then into mixture of cracker meal, paprika, peel and 1 teaspoon salt. Turn chicken in butter to coat; arrange skin side down (don't crowd).

3Bake at 400 for 30 minutes. Turn chicken. Bake 30 minutes. Turn chicken one more time, bake an additional 15 minutes.
