This was a dish I came up with when I needed to use a bottle of artichoke hearts and a package of chicken. My entire family loved it!

Ingredients For artichoke chicken

2 cmarinated artichoke hearts

4 lgchicken breasts, boneless and skinless

1 pkgmonterey jack cheese

1 Tbspmayonnaise

1 tspdijon mustard

3 sprigparsley

1 boxitalian bread crumbs
How To Make artichoke chicken

1In a food processor add drained marinated artichoke hearts, mustard, mayonaise, cheese and parsley and blend to between a coarse and smooth mixture.

2Filet chicken breasts and stuff with mixture.

3Roll in bread crumbs, totally covering chicken and place in oven on a baking sheet. You may want to use toothpicks to hold together. Bake at 375 until chicken is done. Add salt and pepper to taste.
