Ingredients For amy's sweet & spicy roasted garlic sesame chicken

  • SAUCE
  • 2
    heads roasted garlic, cooled
  • 1 md
    onion, minced
  • 2 Tbsp
    sesame oil
  • 2 Tbsp
    crushed pineapple
  • 1/4 c
    water
  • 1 c
    brown sugar, firmly packed
  • 1 1/2 c
    pineapple juice
  • 1/4 c
    soy sauce
  • juice from 1/2 lemon
  • 3 tsp
    rice vinegar
  • 1 Tbsp
    rice wine
  • 1/4 tsp
    cayenne pepper, plus more for extra spicy
  • extra sesame seeds, for garnishing
  • 2 Tbsp
    cornstarch mixed with 2 tbsp. water
  • CHICKEN
  • 2 c
    all purpose flour
  • cornstarch
  • 1/2 tsp
    salt
  • 3 Tbsp
    sesame seeds
  • 1 c
    milk
  • 1
    egg
  • 3-4
    chicken breasts, cut into 1 inch strips
  • oil, for deep frying

How To Make amy's sweet & spicy roasted garlic sesame chicken

    To make the sauce, squeeze out the roasted garlic and mash. Saute onion in sesame oil until it caramelizes, add roasted garlic and cook 1 more minute to release flavor. Add pineapple, water, and brown sugar, and cook until sugar is melted.

    Combine the pineapple juice, soy sauce, lemon juice, rice vinegar, rice wine and cayenne pepper with the garlic mixture. Stir occasionally until mixture boils. Reduce heat and simmer for 1/2 hour or until sauce has reduced by half and is thick and syrupy. If sauce is thin, mix in the cornstarch and water mixture and stir into sauce over medium-high heat until it reaches the consistency of a thick syrup.

    To prepare the chicken, mix together flour, cornstarch, salt, and sesame seeds in a dish and set aside. Mix in a second dish the milk and egg. Dip chicken in milk mixture and roll in flour mixture. Deep fry in hot oil until browned and fully cooked, drain on paper towels.

    Toss fried chicken strips in the sauce.
