I created this new casserole recipe. It's a barbecue take with double the meat, filled with ground beef and chuck roast, hash brown potatoes, and cheeses.

Ingredients For double barbecue meat casserole

  • 30 oz
    frozen shredded hash brown potatoes, thawed
  • 1 c
    processed cheese sauce
  • 4 Tbsp
    barbecue seasoning, divided
  • 1 lb
    ground beef
  • 1 tsp
    garlic powder
  • 2 c
    sweet and spicy barbecue sauce, divided
  • 2 lb
    boneless beef chuck roast, cut into 1/2-inch cubes
  • 3
    fresh jalapeno peppers, seeded and sliced
  • 2 md
    shallots, chopped
  • 3 tsp
    steak seasoning
  • 1/4 c
    packed brown sugar
  • 1 tsp
    dried oregano
  • 8 oz
    cream cheese, softened
  • 1 c
    sour cream
  • 1
    packet ranch dressing mix
  • 8 oz
    sharp cheddar cheese, shredded

How To Make double barbecue meat casserole

    Preheat oven to 350 degrees F.

    Coat the bottom and sides of a 3-qt.baking dish with cooking spray. Add thawed shredded hash brown potatoes, processed cheese sauce and 1 tablespoon barbecue seasoning; mix well and spread evenly.

    In a large deep skillet, cook ground beef over medium high heat for 5 minutes until crumbly and no longer pink. Drain any excess fat.

    Stir in 1 tablespoon barbecue seasoning, garlic powder and 1 cup barbecue sauce. Remove from heat.

    Spoon the ground beef mixture into the bed of hash brown mixture in the baking dish. Spread evenly.

    Heat avocado oil in a medium saucepan over medium heat. Add cubed beef chuck roast, sliced jalapeno peppers and chopped shallots. Cook and saute for 6 minutes until browned.

    Mix in steak seasoning, brown sugar, 1 tablespoon barbecue seasoning, dried oregano and remaining barbecue sauce; stir together until combined. Remove from heat and set aside.

    In a medium bowl, combine the cream cheese, sour cream, ranch dressing mix and remaining barbecue seasoning; whisk together for 3 minutes until blended.

    Use a rubber spatula to spread the cream cheese mixture onto the ground beef mixture. Top with barbecue chuck roast mixture and spread evenly. Sprinkle with shredded sharp cheddar cheese.

    Bake uncovered for 30 minutes or until cheese is melted.
