Ingredients For sweet potato black bean casserole

  • 3 c
    cooked and mashed (or cubed) sweet potatoes
  • 1 can
    corn, drained
  • 1 can
    sliced carrots,drained
  • 2 can
    black beans, drained and rinsed
  • 2 Tbsp
    unsweetened almond milk
  • 1/2 tsp
    ground cinnamon
  • 1/2 tsp
    ground allspice
  • 1/2 tsp
    ground nutmeg
  • 1/4 tsp
    black pepper
  • 1/2 tsp
    ground cumin
  • 1 md
    onion, chopped
  • 8 oz
    tomato sauce

How To Make sweet potato black bean casserole

  • 1
    Mix all ingredients (EXCEPT sweet potatoes - if mashed) together in a bowl until well combined. If using cubed sweet potatoes, combine all ingredients together.

    Put into a 9x13 pan or a casserole dish.

    If using mashed sweet potatoes - spread the mashed potatoes evenly on top of the mixture.

    Bake at 350 degrees until the filling is hot, about 40 mins.
