smokey mac and cheese
I had some leftover cheeses from a party and came up with this. There is just enough smokey flavor. You may add salt to taste. I found with the smokey cheese that it didn't require much.

Ingredients For smokey mac and cheese

1 1/2 csmoked gouda cheese, grated

1 1/2 cplain gouda cheese, grated

1 ccheddar cheese, grated

1 lblarge size creamettes macaroni

1/2 cbutter
-
1/3 cflour
-
2 tspdry mustard
-
1/4 tspcayenne pepper

5 cmilk
-
1 cplain breadcrumbs or crushed ritz crachers

1/2 tspground pepper

salt to taste
How To Make smokey mac and cheese

1Cook macaroni according to directions till al dente and drain. Set aside. Preheat oven to 350. Spray a 9x13 pan with cooking spray.

2In a large saucepan (4 quart) melt butter over med heat. Stir in flour, cayenne, ground pepper and mustard. Gradually stir in milk. Cook and stir mixture until it thickens and starts to bubble. Remove from heat and stir in 3 cups of the cheese. Stir until melted. Combine sauce with macaroni.

3Pour into 9x13 pan. Sprinkle with remaining cheese and breadcrumbs. Bake 40 minutes or until hot and bubbly. Let Stand 10 minutes
