This is my Mom's recipes for simple, but delicious enchiladas. Yummy!!

Ingredients For skillet enchiladas

  • 1 lb
    ground beef
  • 1/2 c
    onion, chopped
  • 1 can
    cream of mushroom soup
  • 1/3 c
    milk
  • 10 oz
    enchilada sauce canned
  • 2 Tbsp
    green chiles, mild chopped
  • 1 pkg
    flour tortillas (8-12)
  • 2 1/2 c
    cheese, mexican blend shredded
  • 1/2 c
    olives, pitted

How To Make skillet enchiladas

  • 1
    Preheat oven to 350. Brown ground beef and onion. Drain. Stir in soup, enchilada sauce, milk and chilies.

    Reduce heat, cover and cook 20 minutes stirring occasionally.

    Microwave tortillas until soft. Roll 1/4 c of cheese into each tortilla and place in a 9x13 baking dish. Cover in sauce and sprinkle 1/2 c cheese and olives over top, if desired.

    Bake at 350 for 30 minutes or so.
