I call this Spam Casserole, but I don't tell people it has Spam until they've tasted it. For some reason Spam is a little off-putting.

Ingredients For meat-macaroni casserole

  • 2 Tbsp
    butter or margarine
  • 1/2 c
    chopped onion
  • 1 can
    campbell's cream of cerlery soup
  • 1/4 tsp
    dried thyme, crushed
  • dash
    pepper
  • 1 c
    elbow macaroni, cooked and drained
  • 12 oz
    can spam, cut in 1/2 inch or smaller cubes
  • 1/4 c
    cheddar cheese, shredded
  • 1 can
    10 oz tomatoes and peppers, drained

How To Make meat-macaroni casserole

  • 1
    In medium skillet, melt butter; cook onion till tender but not brown. Stir in Cream of Celery soup, canned tomatoes and peppers, thyme, and pepper.

    Fold in macaroni and Spam. Turn into 1-1/2 quart casserole. Top with cheese. Bake, uncovered, at 350 for 35 to 40 minutes or till hot.
