Ingredients For eggplant parmesan

  • 1 lg
    eggplant peeled & sliced 1/4 inch
  • 11/2 c
    flour
  • 2
    eggs
  • 1/2 c
    milk
  • 1 Tbsp
    garlic salt
  • 1 tsp
    pepper
  • 2 c
    prego with mushroom pasta sauce or any other.
  • 1 c
    small crud cottage cheese
  • 2 c
    shredded mozzarella cheese
  • 1/8 tsp
    basil
  • 1/8 tsp
    parsley flakes
  • 1/8 tsp
    oregano
  • 1/2 c
    vegetable oil for frying

How To Make eggplant parmesan

    Mix eggs and milk together in one bowl. Mix flour with garlic salt and pepper in another. Take your sliced eggplant in dip into egg mixture and then four coating both sides.

    Heat oil in pan and fry eggplant until golden brown set aside.

    In a 9x13 pan coat the bottom with 1/2 cup of the pasta sauce. Then lay the fried eggplant on top of the sauce. Its ok if they are on top of each other.

    Spoon the cottage cheese over the top of the eggplant. Then pour the remaining pasta sauce over the top of that. Then top with the mozzarella cheese.

    Cover pan and cook 30 minutes @ 350. Take the cover off and sprinkle the basil, parsley and oregano over the cheese. Broil on high for about 10 minutes until top is slightly golden
