Am easier way to make chili and cornbread. Like a chili casserole! Yummy for the coming cool nights.

Ingredients For chili & cornbread bake

  • 2 Tbsp
    canola oil
  • 1
    onion, chopped
  • 3 tsp
    minced garlic
  • 2 lb
    ground turkey or lean ground beef
  • 1
    28 oz can crushed tomatoes
  • 2 Tbsp
    chili powder
  • 1 tsp
    cumin
  • 1/2 tsp
    each, salt and pepper
  • 2
    16 oz cans red kidney beans, drained
  • 1 box
    jiffy corn muffin mix
  • 1 c
    shredded mexican cheese

How To Make chili & cornbread bake

    In lg pot, over med-high heat, heat oil. saute onion and garlic until tender. Add ground turkey or beef. Brown 10 mins.

    Add remaining ingredients except corn muffin mix and cheese. Cover and simmer on low for 20 mins. Heat oven to 375. Spray a 9" x 13: pan w/ cooking spray. Spoon chili into pan.

    In bowl, prepare muffin mix as directed, stir in cheese. Spread over chili. Bake 20 mins.
