Ingredients For fireman bob's fire house burger # 3 chopped wonder

  • 1 1/2 lb
    boneless beef sirloin - chopped
  • 4 Tbsp
    thyme - minced - divided
  • course sea salt - to taste
  • fresh cracked black pepper - to taste
  • 2 tsp
    olive oil, extra virgin
  • 4 Tbsp
    softened butter
  • 1 tsp
    ground mustard
  • 4 Tbsp
    sour cream
  • 4 Tbsp
    parmigiano-reggiano, grated
  • 1 lg
    shallot - diced fine

    INSTRUCTIONS For the butter: Mix butter, mustard, and sour cream in a bowl until smooth. Stir in cheese. Season to taste with salt and freshly ground black pepper. Cover and refrigerate.

    For the sirloin: Chop the meat with knives or have your Meat Man do it for you, He will gladly do it for you. Add the shallots in and combine. Gently shape beef into 2 thick oval patties. Sprinkle each with 2 tsp. of the thyme and season to taste with salt and freshly ground black pepper. Set aside for 10 minutes

    Place the burgers on the grill and cook 8 minutes. Turn burgers over and continue cooking 5–6 minutes more for medium rare, 7–8 minutes more for medium. Top burgers with a chunk of the butter cheese mixture and serve.
