Ingredients For chicken patties stuffed with smoky pimento cheese

  • 2 lb
    ground chicken
  • 1 lb
    mushrooms, chopped finely
  • 1 tsp
    liquid smoke flavoring
  • 1 1/2 tsp
    old bay seasoning
  • 1 c
    bread crumbs
  • 1 tsp
    tarragon, dried
  • 1 c
    extra sharp cheddar cheese shredded
  • 1/2 c
    monterey jack cheese with jalapeno peppers shredded
  • 5 slice
    bacon, cut into 1/4 inch pieces.
  • 3 Tbsp
    pimentos
  • 2
    heaping tablespoon mayonnaise
  • 1 tsp
    each of onion and garlic powder
  • 1/4 tsp
    smoked paprika

How To Make chicken patties stuffed with smoky pimento cheese

    In an non stick pan cook bacon until crisp. Drain on paper towel and set aside. Reserve drippings Heat 2 tablespoon dripping and cook mushrooms until all juices are gone, remove to a bowl and mix in liquid smoke, set aside.

    In another bowl mix together bacon, cheeses, pimentos, mayonnaise, smoked paprika, onion and garlic powder. Taste to add salt and pepper.

    Form chicken into thin patties. Add a spoonful of pimento cheese and top with another patty. Salt and pepper each.

    Heat bacon drippings in a skillet and cook patties 4 minutes, flip and cook 4 minutes more, until cooked through.
