1 1/2 tspold bay seasoning

1 cbread crumbs

1 tsptarragon, dried

1 cextra sharp cheddar cheese shredded

1/2 cmonterey jack cheese with jalapeno peppers shredded

5 slicebacon, cut into 1/4 inch pieces.

2heaping tablespoon mayonnaise

1 tspeach of onion and garlic powder

1/4 tspsmoked paprika

1In an non stick pan cook bacon until crisp. Drain on paper towel and set aside. Reserve drippings Heat 2 tablespoon dripping and cook mushrooms until all juices are gone, remove to a bowl and mix in liquid smoke, set aside.

2In another bowl mix together bacon, cheeses, pimentos, mayonnaise, smoked paprika, onion and garlic powder. Taste to add salt and pepper.

3Form chicken into thin patties. Add a spoonful of pimento cheese and top with another patty. Salt and pepper each.

4Heat bacon drippings in a skillet and cook patties 4 minutes, flip and cook 4 minutes more, until cooked through.
