Ingredients For veal milanese

4 sliceveal cutlets,4 ounces or more,sliced thin and pounded.

1 lgegg beaten

1 chalf and half
-
2 citalian bread crumbs

1 call purpose flour
-
1 bottlecooking oil
-
1 buncharugula
-
2 mdradishes,grated
-
1 mdcarrot,grated
-
4 smtomatoes,fresh,quartered

1/2 lgcucumber,seedless,diced
- THE DRESSING
-
1 lglemon,juiced and zest
-
1 colive oil, extra virgin
-
1 pincheach of white pepper,garlic powder and salt
How To Make veal milanese

1Begin by dredging the veal in the flour then the egg,then the bread crumbs,repeat. Brown the veal in one cup of hot oil,350 degrees for 90 seconds per side,drain on paper towels.

2Assemble the salad,toss with the dressing and cheese and spoon over each cutlet,serve with a lemon wedge. Enjoy!! :)

3Note: To make the dressing I place my stainless steel mixing bowl and wire whisk in the freezer for 30 minutes. This little trick helps emulsify the dressing quickly. Just squeeze in the lemon juice,add the zest and spices and slowly drizzle in the oil while whisking vigorously.
