two patootie pot roast

I have been making this recipe for many years. It is one of my hubby's favorite meals. We love sweet potatoes so when I decided to add them as well as white potatoes, it was a total hit! I have been making it this way for a long time now. The sweet potatoes add a wonderful flavor to the beef. Make this for your family and watch them clean their plates...Enjoy!!!

How To Make two patootie pot roast
-
1Place the flour into a shallow pan and add the salt, garlic, and pepper...stir well and add the beef and coat with 1/2 c. of the flour mixture.
-
2Heat the oil in a 5 qt. dutch oven until hot. Add the beef and brown on both sides. Mix the bouillon and hot water until dissolved.
-
3Add the onion, white potato chunks and bouillon mixture to the pan. Add the basil and bring to a boil. Lower heat to a simmer and cook for about 2 hours. After the beef becomes tender, add the sweet potato chunks and continue to cook for an additional 30 minutes until the potatoes are tender.
-
4I remove the meat and vegetables to a 9x13 casserole dish while I thicken the gravy...this helps prevent the potatoes from being broken up while you are stirring. Whisk the remaining 1/4 c. of seasoned flour with 1/2 c. of cool water until smooth. Add the thickening and Kitchen Bouquet to the broth in the dutch oven, stir well, and simmer until thickened. I spoon some of the gravy over the beef and vegetables in the casserole dish and serve the remaining gravy on the side.
