It is just my son and I tonight...love cooking for him, he'll eat anything if it don't eat him first...lol, although he's not always been that easy to please...he loves this one skillet meal...asked me to make it tonight, you could add a can of corn too...I have also added corn chips...make it your own!! :) My photos

Ingredients For tasty beef - n - rice skillet

1 1/2 - 2 cuncooked minute rice, prepared according to box directions

1 lbground beef
-
1 mdonion, chopped
-
3 clovegarlic, minced
-
1 cbeef broth
-
1/2 tspbeef bouillon paste - optional
-
1 ctomato sauce or chopped tomatoes in juice
-
2 1/2 Tbspchili powder
-
1 1/2 tspcumin
-
1 1/2 tspsalt
-
1/2 tsppepper
-
1 - 15 ozcan ranch style pinto beans
-
1 - 4 ozcan green chiles
-
1 cancorn, drained - optional
-
1 cshredded pepper jack cheese - or cheddar
-
toppings - sour cream, corn chips,chopped green onion - optional
How To Make tasty beef - n - rice skillet

1Cook rice according to package directions.

2Meanwhile, in a large skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain.

3Stir in the rice, beans, broth, tomato sauce, chili powder, salt, cumin, chiles, corn and pepper; heat through. This pic is missing the rice...oops!

4Sprinkle with cheese, cover and cook until cheese is melted - sometimes I set under broiler. I leave this set for 5 minutes to thicken up.

5Serve by itself or with your favorite toppings.
