sweet and sour meatloaf
Good comfort food at its best. I love this dish with macaroni and sharp cheddar cheese. I cook mine in a 13x9 baking pan. It cooks faster and is much easier to slice. Hope you enjoy. I'm spicy, so I put in a jalapeno in with the meat mixture.

Ingredients For sweet and sour meatloaf

1 1/2 lbs. ground chuck

1 cup dry bread crumbs

1 teaspoon salt

1/4 teaspoon pepper

2 eggs

1 teaspoon minced onion

15 oz. can tomato sauce, divided
- TOPPING:

reserved tomato sauce

2 tablespoons brown sugar
-
2 tablespoons apple cider vinegar

1/2 cup white sugar
-
2 teaspoons prepared mustard ( i use hot and spicy mustard)
How To Make sweet and sour meatloaf

1Mix together beef, bread crumbs, salt, pepper and eggs. Add onion and one-half of tomato sauce. Put mixture in loaf pan.

2Bake @350 for 50 minutes.

3In saucepan, combine topping ingredients; bring to boil. Pour over meat loaf, bake 10 minutes more.
