This recipe is a meal in itself. I found this recipe in my Better Homes and Garden Ground meat Cookbook c1973. I have made this recipe and it is tasty. I just love the older recipes minus the calorie reduce ingredients. Enjoy!

Ingredients For stuffed pepper cups

  • 6 medium green peppers
  • 1 lb ground beef
  • 1/3 cup of chopped onions
  • 1-16 oz can tomatoes, cut up (or 14 oz-19 oz can)
  • 1/2 cup uncooked long grain rice
  • 1 tsp worchestershire sauce
  • 1 cup shredded sharp processed cheese

How To Make stuffed pepper cups

  • 1
    Cut off tops of green pepper; remove seeds and membrane

    scallop edges (optional)

    Precook peppers in boiling salted water 5 minutes; drain (for crisp peppers omit precooking)

    Sprinkle inside of peppers generously with salt

    Brown meat with onion. Add 1/2 tsp salt and dash of pepper

    Stir in tomatoes. rice. and a 1/2 cup water, and Worchestershire sauce

    Cover; simmer 15 minutes; stir in cheese

    Stuff peppers

    Place stuffed peppers in a 10x6x1 1/2 inch baking dish

    Bake at 350F 20-25 minutes
