Ingredients For steak roll-ups

1/2 ccooked long-grain rice

1/4 cchopped onion

1/4 cchopped green pepper

1/2 cchopped mushrooms

1/4 cbutter, divided

1 1/2-2 lbround steaks, 1/2 inch thick

3 cspaghetti sauce or tomato sauce
How To Make steak roll-ups

1Saute onion, green pepper and mushrooms in 2 tbsps. butter until tender. Combine sauteed vegetables with cooked rice and mix well.

2Cut steak into 6 pieces, pound each into 1/4 inch thickness. Spread steak with rice. Roll up; fasten with toothpicks or skewer securely.

3Brown in 2 tbsps. hot butter. Pour off fat. Pour a little sauce on bottom of pan. Pour sauce over meat; cover and simmer for 1 1/2 hours or until tender.
