steak & eggs in purgatory “is deliziosa!!!”
The name Purgatory should give you a good idea of the heat level of this recipe, although for us it was just perfect, but then we like heat. This is my spin on this classic dish. I’ve seen it made with all kinds of different ingredients. This is just another one of those recipes that can be made to your liking. And by adding this or removing that you’ve created a recipe that your family will love.

Ingredients For steak & eggs in purgatory “is deliziosa!!!”

2 small steaks { use whatever kind you have }

3 large eggs

¼ of a sweet onion { minced fine }

3 cloves of roasted garlic { smashed }

2 & 1/3 cups of tomato puree
-
¼ teaspoon italian seasonings
-
½ teaspoon dry parsley
-
¼ to ¾ teaspoon red pepper flakes { depends on how much you like heat }

1 & ½ teaspoons pure cane sugar { divided 1 & ½ }
-
1 tablespoon bacon grease for frying the steaks

1 tablespoon unsalted butter for frying the onions/garlic

2 teaspoons fresh ground pepper { divided in ½ }

¾ to 1 teaspoon cayenne pepper

parmesan cheese { to sprinkle on top of the steaks }
How To Make steak & eggs in purgatory “is deliziosa!!!”

1Mix 1 teaspoon of the salt, pepper and cayenne pepper in a small bowl, generously season both of the steaks and sear both sides in the very hot grease { about 1 minute per side }. Set aside on paper towels.

2In the same frying pan melt the butter, add the ½ teaspoon sugar, onions and smashed garlic. Sauté till the onions are translucent.

3To the onion/garlic mixture add the Italian seasonings, dry parsley, red pepper flakes, 1 teaspoon sugar, 1 teaspoon salt and 1 teaspoon pepper. Cook this on low for just a minute to get the dry seasonings going then add the tomato puree, continue cooking this till all the flavors come together and the sauce has thickened. Check for seasonings at this point { salt and pepper }.

4Once you have the sauce to your liking, slide the steaks back into the sauce. Then sprinkle with some grated Parmesan cheese { use how much or little you like } carefully crack the eggs { one at a time } in a small bowl and slide them onto the steaks. Make a well and add one more egg to the sauce, cover and simmer on low till the eggs are just set.
