I use a potato masher when browning my ground beef, and use a rolling pin on my ground corn chips (I gently roll the pin over the unopened bag).

The slightly spicy Spanish rice has the typical Mexican flavors you'd expect and is the source for all the flavor in this easy dinner. The sweet corn mixed with the spices is the perfect combination. Ingredients For spanish rice with ground beef

  • 1 box
    Zatarains Spanish rice
  • 1 can
    Delmonte diced tomatoes w/basil, garlic & oregano
  • 1 can
    Mexican style corn, 11 oz
  • 1 c
    Kraft shredded Mexican cheese blend
  • 2 bag
    Fritos corn chips, 1 oz each (snack size)
  • 1 lb
    ground beef

How To Make spanish rice with ground beef

  • Ground beef browning in a skillet.

    Brown and drain ground beef.
  • Corn added to ground beef.

    Add corn.
  • Rice and tomatoes cooking in a skillet.

    While ground beef is browning cook Spanish rice according to directions on box using the can of tomatoes.
  • Pouring beef, corn, and rice mixture into a baking dish.

    Add rice to ground beef mixture. Pour into sprayed 9 x 13 pan.
  • Cheese sprinkled over casserole.

    Sprinkle cheese over top.
  • Corn chips sprinkled over casserole.

    Add crushed corn chips (optional).
  • Casserole baking in the oven.

    Cook for 10 minutes at 350.
