I just love a bold, full of flavor, hearty soup... straight from my kitchen to yours. I know the giardiniera is a little off the wall , but trust me it works great in this soup! Try it, you'll like it as much as my family and I do :)

Ingredients For southwestern soup

1 Tbspolive oil
-
1 mdonion, diced
-
1jalapeno, diced

3 Tbspmexican oregano
-
2 lbground beef
-
1 tsponion powder
-
1/4 tspgarlic powder
-
1 tspkosher salt
-
1/2 tspblack pepper
-
4 cwater
-
4 tsptomato bouillon with chicken flavor
-
1 bunchcilantro, chopped fine
-
1 small canmexican style corn
-
1 canfire roasted diced tomatoes
-
1 canblack beans
-
1/2 pkgtaco seasoning
-
1 jargiardiniera (regular or hot)
-
1 jarfavorite salsa (i use a local medium heat one)
- TOPPINGS

diced onion, cilantro, shredded mexican blend cheese, sour cream
How To Make southwestern soup

1Saute onion, jalapeno and mexican oregano in olive oil until onion and pepper are translucent. Remove from pan and set aside.

2brown ground beef, onion powder, garlic powder, salt and pepper, crumble and drain.

3mix water with tomato bouillon and heat in microwave or on stove top until luke warm. Pour over browned meat

4add onion/jalapeno, half of the cilantro (other half use for topping), mexican style corn, fire roasted diced tomatoes, black beans, taco seasoning and favorite salsa

5drain giardiniera and chop all veggies smaller and add to soup

6simmer soup in crock pot or stove top for 1 hour. Top with toppings of choice and enjoy ;)
