I love slow cooked cuts of beef. They are very easy to make and come out melt-in-your-mouth tender. I keep on experimenting with different ingredients every time. All of my "experiments" so far have turned out tasting good and this one here is one of the best.

Wow, this beef roast slow cooks to perfection in the Crock Pot. The beef bottom round roast is full of flavor. There's a very subtly sweet and tangy flavor from the honey mustard. We loved the addition of potatoes and mushrooms. They really soaked up the flavors from the juices. A cozy and comforting dinner.

Ingredients For slow cooker honey mustard pot roast

  • 2 Tbsp
    olive oil, extra virgin
  • 1 3/4 lb
    beef bottom round roast
  • salt and pepper
  • 1 1/2 tsp
    garlic, minced
  • 1 tsp
    beef bouillon
  • 1 c
    water
  • 3 Tbsp
    honey mustard
  • 1/2 c
    chopped onions
  • 1 can
    mushroom pieces (optional)
  • 2 md
    potatoes cut into 1" cubes (optional)

How To Make slow cooker honey mustard pot roast

  • Browning each side of the seasoned beef.

    Sprinkle the roast on both sides with salt, pepper, and garlic. In a frying pan over medium heat add the olive oil, and sear the roast on all sides.
  • Stock, water, honey mustard, and onions in the slow cooker.

    To the slow cooker add the bouillon, water, honey mustard, and the onions and stir to dissolve the bouillon and mustard.
  • Browned roast added to the slow cooker.

    Move the roast with the pan drippings to the slow cooker.
  • Setting slow cooker.

    Cover and cook on high for 5 hrs or low for 8 hrs.
  • Mushrooms and potatoes added to the slow cooker.

    If you want, 1 hr before the end you can add the mushrooms and potatoes.
