My Gram used to make this delicious meal all year round. It didn't have to be St. Patty's to enjoy! I love the ease of using the crock pot and how tender the brisket becomes...Delicious! Enjoy!

Slow Cooker Crock Pot
Ingredients For simple corned beef & cabbage - crock pot tender

3 lbcorned beef brisket - seasoning packet - rinsed

4 chot water
-
2 Tbspcider vinegar
-
2 Tbspsugar
-
1bay leaf
-
1/2 tspground pepper
-
1 or 2 mdonions, cut into wedges

6 mdpotatoes, peeled and quartered
-
6 - 8carrots, peeled and cut into 1 inch pieces
-
1 - 1 1/2 lbhead of cabbage, cored - cut into wedges

salt& pepper when serving

wholegrain mustard for serving - optional
How To Make simple corned beef & cabbage - crock pot tender

1Combine water, vinegar, sugar and pepper, in the bottom of a 6 quart slow cooker. Mix well. Then place the onion into the water mixture. Add bay leaf. Place the rinsed brisket on top of the onions, sprinkle with seasoning packet. Scatter the potatoes and carrots over the top and along the sides of the brisket. Cover and turn pot to high. Cook for 4 hours.

2Remove the lid and place cabbage wedges over the top, cover and continue to cook another 3 - 3 1/2 hours or until beef and vegetables are to desired tenderness.

3Carefully remove the brisket from the pot and cut across the grain. Serve with vegetables on the side, along with the yummy juices and some whole grain mustard. Salt & pepper as desired.
