I lived in Texas for 2yrs after high school. Loved going to Lake Travis and floating on our Rafts. On our way there was always a truck that sold these steak fajitas. They were delicious! Simple a few ingredients but very flavorful. I made some last night and think I captured there recipe. I even wrapped them in tin foil like they did. This was a food truck run by a few Mexican's, before food trucks were a thing. But thats all they sold were these steak fajita's. You couldnt just buy one, a dozen more like it for a snack or lunch later.

1-2thin steak like sirloin approx. 1.5 pounds

3 lgroasted tri-color peppers

1roasted jalapeno pepper
-
salt and pepper

guacamole or sour cream on side
How To Make side of road authentic steak fajita's

1I always roast my peppers on the stove burners, slice and keep in fridge for sandwiches or whatever (delicious) I placed all my peppers on stove top rotating till completely black. set in container and cover with plastic wrap till cooled. When cooled, wearing rubber gloves I peel the char off and remove any seeds. Slice and place in a container.

2Next I pan fried my heavy seasoned w/s&p steaks a few minutes on each side. Added peppers to pan, stir, and turn off fire and cover with tin foil for five minutes so peppers marry with steak and juices. Remove steaks slice thinly and place back with peppers and stir.

3Warm tortillas. Fill with steak mixture and roll. Thats it, the flavor together is wonderful! I serve with sour cream and guacamole for dipping.
