1 1/4 lbground chuck

1/4 cfresh parsley, minced

2 Tbspscallions, minced

1 tspsea salt

1/2 tspblack pepper

2 Tbspall purpose flour

2 Tbspolive oil
-
2 conions, sliced

1 tspsugar
-
1 Tbspgarlic, minced

1 Tbsptomato paste
-
2 cbeef broth
-
1/4 cdry red wine
-
3/4 tspsea salt
-
1/2 tspthyme
-
4 tspfresh parsley, minced

4 tspparmesan cheese
How To Make salisbury steak like mom used to make

1Combine ground chuck, parsley, scallion, salt and pepper in a medium bowl. Divide evenly into 4 portions and shape each into oval patties. Place 2 Tbsp. flour in a shallow dish; dredge each patty in the flour. Reserve 1 tsp. flour.

2Heat 1 Tbsp. oil in a saute pan over medium-high heat. Add patties and saute 3 minutes on each side or until browned. Remove from pan.

3Add onions and sugar to pan; saute for 5 minutes. Stir in the garlic and tomato paste; saute 1 minute, or until paste begins to brown.

4Sprinkle the onions with reserved flour; cook 1 minute. Stir in broth and wine, then add the salt and thyme.

5Return meat to pan and bring to a boil. Reduce heat to medium-low, cover and simmer 10 minutes.

6Serve over mashed potatoes or noodles.
