s.o.s. aka creamed chipped beef

Anyone who has ever been in the military knows that S.O.S. stands for Sh*t on a Shingle. My Dad was in the Air Force and my Mom learned how to make it. Tastier than served in the mess, of course. Some people use milk as the sole ingredient for the liquid. I prefer to add some broth, if I have it. I sometimes reverse them and use 1 cup milk and 1/2 cup broth. After all, it's just sh*t on a shingle!

Ingredients For s.o.s. aka creamed chipped beef

  • 2
    2.25 oz jars of dried beef
  • 3 Tbsp
    butter
  • 3 Tbsp
    all purpose flour
  • 1/4 tsp
    salt and pepper (each)
  • 1 c
    beef broth *
  • 1/2 c
    milk
  • 1-2 Tbsp
    worcestershire sauce

How To Make s.o.s. aka creamed chipped beef

    Remove beef from jars, rinse and dry on paper towels. Melt butter in a medium sauce pan over medium heat. Stir in flour, salt, and pepper, to make a roux. Stir in broth, milk and Worcestershire sauce. Cook and stir until thick and bubbly.

    Shred the beef and add to sauce; stir and simmer about 5-10 minutes. Serve over biscuits or toast points.

    * I make my own broth (as I have a problem with sodium and MSG included in store bought). It's a long process (2-3 days), but well worth it. I'll post the recipe sooner or later. Sooner, if I get requests.
